The taste of fall....fresh from my oven!! While it's still hovering around 100 degrees here I can't help but be excited for fall! I love hearing from people all over the country who've mentioned that their mornings are cool and crisp and fall is in the air. There is no better way to get in the mood for fall than apples cooked in sugar, butter, and cinnamon and wrapped in puff pastry sprinkled with more sugar! I have been wrapping all sorts of things in puff pastry for some time now; chicken, brie, peaches, sausages, spinach filling..on and on! So I was delighted to see this recipe for Apple-Cinnamon Strudel on page 110 in the September 2008 issue of Everyday Food. The strudel turned out great. I added about 4 tablespoons of brown sugar to the apples too. (I love the taste of brown sugar and cinnamon!) Make sure to let the strudel bake the suggested time so the layers can really puff, if your top is browning too much then cover loosely with foil.
Serve warm with vanilla ice cream or a tall glass of leche.
