I like to buy pork egg rolls from the Schwan's man. They are an easy dinner for a busy day. Recently I got the urge to make my own. They are fairly simple to make and you end up with enough to feed a large family or have plenty of leftovers.
I used the recipe from the back of the wonton wrappers as a guide. You will need:
1 pound ground pork (or desired meat)
3 cups finely shredded or chopped cabbage
One medium sized carrot,shredded-about 1/4 Cup
3-4 Green onions, finely chopped
A large handful of bean sprouts
Soy sauce, salt, pepper
Package of 20 wonton wrappers
Vegetable oil for frying
Step 1: Prepare vegetables, put in large bowl.
Step 2: Lightly brown pork about 4 minutes over high heat, breaking up large pieces. Season with salt, pepper and a bit of garlic salt.
Step 3: Add veggies to pan...
...cook until wilted and clear, about 4 minutes. Add about 1/2 Tbsp. soy sauce to mixture while cooking if desired. Stir frequently so pork doesn't burn.
Step 4: Remove from pan and allow mixture to cool about 10 minutes. (This is when I get my rice on the stove).
I put about 1/4 cup filling in each wrapper.
Use a bit of water to seal edges.
I place egg rolls on foil lined pan with a foil/paper towel lining underneath. This way I lift the top layer of foil as I cook, placing fried egg rolls on paper towel lined foil beneath. (See picture below).
Step 6: Heat about 2 inches oil in large sided pan to 350 degrees and fry in batches for about 2 minutes each, turning as needed.
Step 7: Serve over rice with sweet and sour or desired dipping sauce on the side. Yummy!

Wow! Those look fabulous!
