I've mentioned my love affair with puff pastry before. These simple cookies are so SUPER easy to make and the end result is fantastic! I used to buy them in Costco, but now I make my own and they are much better fresh from the oven. Last Christmas my good friend Marci asked me for a recipe to take to a cookie exchange and this is the one I gave her. She said they were the hit of the party and the ladies didn't believe she'd actually made them! Three simple ingredients are all you need: puff pastry, sugar and a dash of salt. I came across the recipe in Ina Garten's Barefoot In Paris cookbook. Don't you just love the Barefoot Contessa?
Basically you sprinkle an absurd amount of sugar on rolling surface, then lay down one sheet of puff pastry, then sprinkle with more sugar, give a quick roll with rolling pin and then do a series of quick folds. Now slice dough with sharp knife and lay cookies on parchment lined baking sheets, bake at 450 for 6-8 minutes until underneath of cookies are turning golden brown, then flip over and bake another 3-4 minutes. You want the cookies to be a nice caramely brown, but be careful not to burn them.
While the classic palmiers are perhaps the best, I think you could do any number of variations on these, the two I have come up with are cinnamon (just add a few teaspoons cinnamon to the sugar) and lemon (finely mince a tablespoon of lemon zest and add to sugar, rubbing between your fingers to really flavor the sugar nicely). So there you go, fantastic palmiers to sweeten your week!
