I Love, Love, Love pumpkin bread. I like to make mini loaves and share them with friends and family this time of year. The recipe I use makes a nice pumpkiny, not overly spicy (I omit most of the cloves), very moist bread. The recipe will yield two large loaves or 8 mini loaves. I have a pampered chef stoneware pan that works nicely for the mini loaves.
Pumpkin Bread
2/3 cup Shortening
2 &2/3 cups Sugar
4 Eggs, room temp.
1 large can (29 ounce) Pumpkin puree (not pie filling)
2/3 cup warm Water
3&1/3cups+1Tablespoon Flour
2 tsp. baking soda
1/2 tsp. baking powder
1&1/2 tsp. salt
1 tsp. ground cinnamon (I use a bit more!)
1/2 tsp. ground cloves (I use quite a bit less! I'm not too big on cloves!)
2/3 cup chopped walnuts
Preheat oven to 350, grease pans with Crisco.
Measure dry ingredients into large bowl, whisk together to combine,set aside.
Mix shortening and sugar in mixer with paddle attachment on medium-high speed until light and creamy.
Add eggs one at a time, reduce mixer speed and add pumpkin and water.
With mixer on low speed add pre-mixed dry ingredients until combined.
Remove bowl from mixer stand, gently fold in chopped nuts.
Divide batter equally among prepared pans. (about 2/3 full per pan)
Bake 50-60 minutes for large pans, or about 38 minutes for mini loaves, until toothpick inserted in center just comes out clean. Allow to cool in pans 10-15 minutes before removing to cooling racks.
Loaves should keep about 3 or possibly 4 days at room temperature, you may also store them in the fridge in Tupperware if you like. Enjoy!

what a coincidence...I made pumpkin bread today! It is one of Kate's favorites. Love it fresh out of the oven slathered with butter!

mmmmm. looks yummy. I've been thinkin it's time to make my pumpkin bars or cupcakes or cookies, or ... LOL. I wish you lived closer, I'd figure out a way to get on your friends list. ;o) ooxx`jod
