Every Saturday morning we enjoy pancakes. I get tired of plain old pancakes and like to mix it up by making blueberry lemon pancakes. All you have to do is prepare your normal pancake batter, ladle batter on hot griddle, add blueberries to the pancakes just before they begin to bubble, allow the cakes to bubble and then flip.The berries will sizzle and pop, releasing their juices. Let cook another 2-3 minutes on blueberry side then place blueberry side up on a plate. I usually place a small amount of butter on the cakes. Then sprinkle a fair amount of lemon juice evenly over the pancakes. Sift powdered sugar generously over the top. Voila! These aren't your plain old maple syrup pancakes, the combination of blueberries, lemon juice and powdered sugar is a match made in pancake heaven! Here is the pancake recipe I like to use.

How fun! We usually do waffles on Sunday mornings with cinnamon and sugar and vanilla sprinkles, but I will have to try the blueberries since Kyle loves them!!

Oooo they look so good. Maybe I should make those for dinner tomorrow night- but where to get the berries? I love lemon juice and powdered sugar on my french toast too. So yummy!

Yum! These pancakes sound so good! I think I'll try it, I wonder if frozen blueberries would work. I must try this, these look wonderful. Thanks for sharing.

Those pancakes look amazing! My husband and daughter usually make pancakes on the weekend. I will request this next time!
