Nothing feels more comforting to me on a cool rainy day than a hot bowl of soup. So here's the latest soup I've been making. I like this soup because it's flavors are subtle but delicious, it has cream in the recipe (everything tastes better with cream in it!) and it is fairly simple to make. This will yield four servings if you are having other courses, but if you are only eating soup (in which case you will have a much larger portion) you will probably have more like three servings. This recipe can easily be doubled, just allow for longer cooking time.
Leek & Potato Soup
3 Tablespoons butter
1 medium onion, finely chopped
3-4 leeks, white part only, sliced
1 celery stalk, finely chopped
1 garlic clove, finely chopped
1/2 pound potatoes, chopped ( I like about 3/4 pounds, thicker soup)
3 cups chicken stock
3/4 cup heavy cream
2 Tablespoons chopped chives for garnish
Melt the butter in a large pot. Add the onion, leeks, celery and garlic. Cover the pot and cook, stirring occasionally, over low heat for 20 minutes, or until the vegetables are softened but not browned.
Add the potatoes and stock and bring to a boil. Reduce the heat and simmer, covered, for 20 minutes. Allow to cool slightly before pureeing.
I strain the broth into a large bowl and put the potato/leek mixture in the food processor, you can also use a blender.
Puree.
Return puree and broth to pot.
Bring the soup gently back to a boil and stir in the cream. Reheat without boiling. Season lightly with salt and pepper to taste. Serve hot garnished with chives.
I like to heat some olive oil in a hot pan and grill sourdough slices to serve on the side or broken up as croutons in the soup. Add a glass of chilled white wine on the side-Voila! A perfect way to end your day, or start your evening!
