I made you something sweet for Valentines Day!! Actually these are more like something sweet and rich. I like to make this Guittard recipe for white chocolate brownies with a few changes. I double the batch and bake in a 9X13 pan, and I use the white chips for melting with the butter and substitute chocolate and butterscotch chips in place of the extra 1 &1/3 cups white chips (or 2 & 2/3cups if you're making a double batch). I bake it slightly longer in a 9X13 pan, 40-45 minutes for a double batch. At any rate these brownies are over the top rich, loaded with chips (you can use any combination you like, Guittard also makes a good cappuccino chip that is great paired with the chocolate and white chocolate chips) and a nice change from the standard everyday brownie. I am going to give the measurements for a double batch in the following tutorial, so here it goes:
Melt 1 cup butter and 1 &1/3 cup white chips in double boiler, or use the microwave, being VERY careful not to over heat, stir well between each 30 second interval. Set aside. In mixer beat 4 room temperature eggs, 1 cup sugar, 1/2 tsp. salt...
...until pale and thick (about 5 minutes). Blend in the butter/white chocolate melted mixture and 2 tsp. vanilla at low speed. Add and mix 2 cups AP flour just until combined. Stir in 4 and 2/3 cups of desired chips. (I usually do about 1 cup butterscotch and the rest semi-sweet and maybe a few white chocolate-just use what you like).
Spread into greased pan. Bake at 350 about 40-45 minutes, top will be golden brown. Allow brownies plenty of time to cool as they are very dense. If you plan on serving these the next day you may want to reheat for a few seconds in the microwave to soften the chips. If you want to go over the top, serve slightly warm brownies over vanilla ice cream topped with butterscotch caramel sauce!! Yikes! (Probably best not to think too much about all of the chocolate chips (6 cups total!) and butter that are in these babies, they aren't your everyday brownie so you won't be making and eating them everyday anyhow!!)
