It's hard to beat pizza. I usually make my own crusts but sometimes a change is nice...
...enter pre-made mini pizza crusts! These are great for a quick and easy meal. They resemble pita bread, though they are slightly thicker and there is not a pocket like a pita would have. You can find pre-made mini pizza crusts at most markets.
I like to do a version of pizza margherita, adding kalamata olives and a sprinkling of chopped green onions to the mix. So here it is: Brush crusts lightly with olive oil. If you love pizza sauce you can add a very thin layer of sauce in the middle of the crust if you would like to, but it will be just as good without it. Layer small slices of fresh mozzarella, halved grape tomatoes, halved kalamata olives, chopped green onion and chopped basil. I like to use the little grape tomatoes because they are the perfect size for mini pizzas and are easy to find in the market even in the middle of winter. I don't buy larger tomatoes in winter because they are usually a great disappointment. I like to halve the olives because although I buy them pitted I always seem to find a pit or two in the kalamata olives. If you like you can add a sprinkle of parmesan cheese on top.
Now into a 400 degree oven for about seven minutes, until cheese is nicely melted.
Serve with a simple green salad on the side. This is a light and fresh dinner that your guests are sure to enjoy! And you didn't even have to make the dough!
Of course if you are like me and have little ones to feed you can always make a few plain cheese pizzas and everyone will be happy!!!

When I was looking at your first few photos, I was thinking yummy, but wondering if your kids would eat it. And then, voila, the cheese pizza...I'd be doing the same thing for Kate!
