I mentioned I like eating fresh berries this time of year. One of my favorite ways to prepare them is to slice them and mound them on hot buttered pancakes. I squeeze lemon juice over the top and give them a dusting of powdered sugar (just like I do for my blueberry lemon pancakes). We had the pleasure of a visit from our Montana family this week. I made pancakes and my sweet sister in law liked the recipe. So here is the recipe I love to use for pancakes. I think it is a winner because they are more crepe like than cake like, light and delicious. The recipe is from The Joy of Cooking. It's best to have your milk and eggs at room temperature otherwise the butter will solidify when added to the liquid. (You can simply warm the milk slightly in a microwave in a pinch)
Whisk together in a large bowl:
1 1/2 cups AP flour
3 Tbsp. sugar
1 3/4 tsp. baking powder
1 tsp. salt
Combine in another bowl:
1 1/2 cups milk
3 Tbsp. butter, melted
2 eggs
1/2 tsp. vanilla extract
Mix the liquid ingredients quickly into the dry ingredients. Use 1/4 cup batter per pancake. Cook on hot griddle (I set mine at 350-375). Makes about 16 4-inch pancakes.
I think you'll agree these are perfect pancakes!

Those pancakes do look very crepe like and delicious. So pretty too with the lovely berries. Yum!

Wow, it looks like you've got the recipe down. Thank you for sharing. My neighbor made crepes the other day... and invited me over to have them with homemade strawberry freezer jam. I was in heaven. It's so nice to have caring neighbors. I hope you had a great Monday!
