The day before I headed off to the Farm Chicks show I was making wedding sheet cakes for friends. They wanted a pineapple cake and since I didn't have a recipe or a lot of time to make scratch cakes and I had to make a large volume of cake I decided on using white cake mixes as the base for my cakes. Here is the recipe I came up with:
1 Package Duncan Hines White Cake Mix
1 Package Jell-O Vanilla Instant Pudding Mix
3 eggs
1/2 cup vegetable oil
1/3 cup water
1 tsp. vanilla extract
1/4 tsp. lemon extract
One 8-Ounce can of crushed pineapple, including juice
Preheat oven to 350 degrees. Grease and flour two 8-inch pans.
Combine ingredients, except for pineapple, in the bowl of mixer fitted with a paddle attachment.
Mix on low speed until combined, about 1 minute. Continue mixing on medium-high speed for 3-4 minutes.
Add pineapple, mix on low speed until combined. Scrape sides of bowl and mix on medium high speed 2 minutes.
Divide batter between pans and bake for 26-28 minutes. Cool in pans on wire rack 10-15 minutes. Remove cakes from pans and cool on wire rack until completely cooled.
If you would like to make this cake for a large crowd, use an 11X15" pan (Wilton pans are great and available at Wal-Mart or Michael's Craft stores), double the recipe using a 20 ounce jar of pineapple in place of two smaller cans, and bake in a 325 degrees oven for about 55 minutes. I whipped up four of these large cakes for the wedding and they turned out really nice.
And for frosting: You may use any number of frostings on this cake. For the wedding I made simple butter cream frosting.This whipped cream cheese frosting works nicely also and complements the sweetness of the cake, as would a simple freshed whipped cream topping.
This cake is super easy to make. The pineapple adds a sweetness and keeps the cake extra moist. This is a nice cake to make for a party, special occasion or just because it's summer and you want a taste of the tropics to put you in a festive island mood! Bon appetit!

This is absolutely one of the best cakes I have ever had. I'm not a huge cake lover, but I had 2 pieces at the wedding and took a 3rd home for breakfast the next morning! Thanks for posting the recipe Kim!

Thanks for posting this recipe. I use cake mixes and pudding for all my cakes and I am always looking for new cake flavors. This one sounds delicious. This would make a great Pina Colada cake with some coconut cream and some shredded coconut on top. YUM! I can't wait to try this one! Thanks again.
