I've been on a mission to make homemade granola bars. There's something about creating your own recipe that is intensely gratifying. For my third attempt at making my own recipe I reduced the flour, increased the cinnamon and opted for an egg white rather than the whole egg. I think my adjustments were quite successful in acheiving the texture and taste I was hoping for. If you would like to add to this recipe you might consider pecans or almonds, coconut, mini white or dark chocolate chips. The end result is a bar that is crunchy yet still chewy, a requirement of mine for a great granola bar. This is also a nice recipe to make with your children, as it is fairly simple and they will enjoy eating something they have helped make.
Cinnamon Cherry Granola Bars
1 cup old-fashioned rolled oats
1 cup Rice Krispies cereal
1/4 cup whole wheat flour
1/4 cup packed brown sugar
1/2 tsp. cinnamon
1/4 cup honey
1 tsp. vanilla
1/4 cup dried cherries, chopped
1 egg white
Preheat oven to 350 degrees. Lightly grease an 8X8 baking dish.
Combine oats, rice krispies, whole wheat flour, brown sugar and cinnamon in bowl. Mix with a fork until combined.
Add honey and vanilla. Mix well.
Add chopped cherries and mix to combine.
Separate egg white into a small bowl...
...whisk until frothy and foamy... add to granola mixture and mix until evenly coated.
Place granola mixture in baking dish and press down evenly with the back of a fork. Bake in oven for 22-25 minutes until evenly browned. Remove from oven and cool on wire rack in pan until completely cooled. Cut into bars.
Yummy homemade granola bar my kids will actually eat: mission accomplished!!!
