During summer we find ourselves with more tomatoes than we know what to do with. I make fresh salsa, pizza sauce, spaghetti sauce, tomato relish. When I'm in a hurry I make "summer pasta". This is a quick and easy dinner or side dish, feel free to add your choice of summer squash, zucchini, olives etc. to the dish.
Preheat oven to 400 degrees. Line baking sheet with parchment paper. Spread an even layer of cherry or plum tomatoes on the sheet. Drizzle with olive oil and season well with fresh ground pepper, salt and dried basil. Bake in oven until tomatoes pop open, releasing their juices. Meanwhile cook your choice of pasta.
Drain pasta and drizzle lightly with olive oil. Place tomatoes and juices from parchment paper in a bowl or platter with pasta. No need for sauce, the juice from the tomatoes and olive oil will be just fine. Garnish with parmesan cheese and serve. Fresh, tasty, and super easy!!



My tomatoes are finally coming on! I had a cherry tomato/baby mozzarella/fresh basil sandwich on homemade bread yesterday and today for lunch. I can only pick like 5 tomatoes at a time - so slow to ripen! May have to break down and buy them from the farmers market! Your pasta looks yummy!

This pasta sounds delicious. I'll try it. I planted some cherry tomatoes and if the sun stays out for more than a day, hopefully, I'll have some soon. I want to try your granola bar recipe, too. It sounds really good!

I could eat that everyday. Sometimes I do them like you have shown but add a little balsamic and then serve the hot poppy tomatoes with salmon . So yummy!
