These butterscotch bars might be more appropriately named brown sugar bars, since they are moist, dense, chewy and sugary from the large amount of brown sugar in the recipe. If you are a fan of brown sugar you will probably love these bars.
Butterscotch Bars
1/2 cup butter
2 cups brown sugar, firmly packed
2 eggs
2 cups sifted flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. vanilla
Preheat oven to 325 degrees. Lightly grease a 9X13 pan. Melt butter. Add brown sugar and allow to cool slightly.
Sift flour, baking powder and salt together.
Add eggs and mix well. Stir in vanilla.
Add sifted dry ingredients and mix. Mixture will be thick and sugary.
Spread in prepared pan and bake until top is golden brown and a toothpick inserted in center comes out clean, about 40 minutes. Cool completely, cut and serve.

Butterscotch Bars or Brown Sugar Bars or Brown Sugar Blondies, or whatever you want to call them, are one of my FAVORITE bar cookies. Easy and absolutely yummy. Thanks for sharing your recipe along with the great photos!
